White Chocolate melted over a double boiler, coconut added and you have yourself a pretty little snowball! Not to mention a treat you won’t be able to eat just one of.[recipe title=”White Chocolate Haystacks” difficulty=”easy”]
So here we are at Day 3, your Christmas Candy Recipe for today is White Chocolate Coconut Haystacks.
To Make these you will need:
- 2 cups White Chocolate Chips
- 2 cups Sweetened Shredded Coconut (the softer and flakier the better)
Step 1. Line a large cookie sheet or your counter top with Parchment Paper
Step 2. Fill the bottom of your double boiler with a small amount of water maybe 1/2 cup or so. Place the other pan or glass bowl on top. Heat at Low.
Step 3. Add the White Chocolate Chips to the top pan and allow to melt, stirring frequently. You’ll notice as the chocolate starts to melt. Keep stirring until the White Chocolate is melted and smooth. Remove from heat.
CAUTION: Be careful not to allow the water to boil or to start steaming from the bottom. If this happens turn off the heat and remove the double boiler. You can always return it back to a low heat if you need to. White Chocolate ESPECIALLY is easy to burn. For best results keep it on low and be very patient.
Step 4. CAREFULLY remove glass bowl and lay it on a towel.
Step 5. Add the Sweetened Coconut to the melted White Chocolate and carefully but quickly stir until just combined. You’ll notice the White Chocolate will start to harden pretty fast.
Step 6. Spoon out your Coconut and White Chocolate mixture and slowly lower it to the parchment paper. These are best and taste the greatest when you spoon them onto the parchment as they are. You might be tempted to mold them, don’t. You’ll be happy you didn’t! 😉
Step 7. Continue until you’re left with an empty bowl, let sit until completely set and hardened. Go ahead lick the spoon!
