Life Amor Family's 12 Days of Baking and Candy Making Day 5 Oatmeal Craisin Cookies

Taking a bite into one of these cookies instantly makes me think Christmas! The delicious dried cranberries, pecans  and cinnamon are what do me in!

Cookie recipes I always think of as a simple dessert. Most of them can be done in one bowl while the oven is preheating and ready to pop in the oven. Done only in minutes and ready to enjoy with a nice glass of milk. YUM!

For Day 5 of Life Amor Family’s 12 Days of Baking and Candy Making we will be making a big batch of Oatmeal Craisin Cookies. If you’ve been following along on the previous days I’ve shared, you know you’re in for a real treat!

Oatmeal Craisin Cookies

Oatmeal Craisin Cookies

You will need:

  • 2 cups Flour
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1 tsp Kosher Salt
  • 1 cup Softened Unsalted Butter
  • 1 cup Sugar
  • 1/2 tsp Cinnamon
  • 1 cup Packed Dark Brown Sugar
  • 2 Large Eggs
  • 2 tsp Mexican Vanilla (regular Vanilla is fine)
  • 3 cups Old Fashioned or Rolled Oats
  • 1 1/2 cup Dried Cranberries
  • 1/2 cup Chopped Pecans

Parchment Paper, Cookie Sheet, Standing Mixer or Hand Mixer

Directions:

Preheat oven to 350 degrees

In a Medium Bowl whisk together Flour, Baking Soda, Baking Powder, Kosher Salt and Cinnamon, set aside. Combine Sugars, Eggs, and Vanilla in a Large Mixing bowl at Low Speed, Increase speed until mixture is Light and Fluffy. Stir the Flour Mixture into the Sugar Mixture until no Flour is visible. Do Not Over Mix! Add the Oats, Dried Cranberries and Pecans, stir slowly until just combined.

*Baking Tip- If you have the time to put your bowl of cookie dough in the fridge for an hour or so, Do! This makes it easier for you to scoop and your cookies have a better chance of being thick and chewy.

Using an Ice Cream Scooper Drop about 2 tbsp of dough onto the parchment lined cookie sheet. Bake 11-13 Minutes until Golden but moist beneath the cracks. Let cookies cool for 2 minutes on baking sheet before transferring to cooling rack.
