
We’re a day past halfway done with LifeAmorFamily’s 12 Days of Baking and Candy Making which is sad BUT We are THAT MUCH CLOSER TO CHRISTMAS!!!!!! Which is SO exciting!!!

Ok, So Day 7 is not only dedicated to my Debbie aka my Step Mother whom I love so much, but also dedicated to those who love the Sweet and Savory treats. And the Funky Cheeses 🙂
[recipe title=”Bite Size Raspberry Brie Pastries”]Bite Sized Raspberry-Brie Pastries

You will need:
- 1 box(of2) Frozen Pastry Dough (Found in Frozen Dessert Section at most grocery stores)
- Jar of Raspberry Preserves
- 6 oz Brie Cheese
- 1 Egg
Mini Muffin Pan, Cooking Spray, Rolling Pin & Pastry Brush
Directions:
Take Pastry Dough out of freezer 40 minutes before prep time
Preheat oven to 375 degrees
Spray your Mini Muffin pan with Cooking Spray

Step 1. On a lightly floured surface unfold one sheet of your pastry dough.
Step 2. With the rolling pin begin to gently roll out your Pastry Dough in all directions until about 1 inch larger on all sides.

Step 3. Using a knife or a pizza cutter, cut the dough into 12 squares. Repeat with the second sheet of Pastry Dough.

Step 4. Place each of the squares into the greased Mini Muffin pan.
Step 5. Cut the Brie into small squares and add to the middle of your pastry squares, Top with a tablespoon or so of Raspberry Preserves, trying your best to keep the brie and preserves from touching the edge of the pastry squares.
Step 6. Beat the egg to create your egg wash. Dip the pastry brush into the egg wash then lightly brush along the edges of the pastry dough, pinch together. After all of your pastry squares are pinched, lighty brush your egg wash over the tops.

Step 7. Place Mini Muffin Pan into preheated oven and bake for 15-17 Minutes, until golden brown.

Step 8. Allow to cool for 2-3 Minutes in pan then transfer to wire rack.
[/recipe]Tada!!! I enjoyed these best once they were completely cooled but my husband enjoyed them right out of the oven while the Brie was still melty.
