Oh my goodness, I have sure neglected my blog! I can blame it on all the things but honestly it’s been in the back of my mind everyday. I love this blog and I love all of you that take time out of your busy lives to read what I have to share.
Quick Update on LifeAmorFamily
Baseball is on and in full swing! On top of Baseball we are preparing for our trip to Japan in less than 2 weeks, 2 birthdays, Easter Sunday (I’m making Easter treats to sell! Can’t wait to share the pictures with you all!) I’m keeping up with my gym routine, added another class(ME TIME.) Oh the list just goes on and on. But it’s okay, we’re happy!
Macy-Jane Started Preschool!
My baby girl, my first daughter, our “Boo” started pre-school last week. I find myself standing outside the gate just watching her go out and be this independent little almost 4 year old. God really blessed us when he gave us Macy-Jane. I don’t know what he was thinking when he sent us Molly! JUST KIDDING. She does so well, i’ve already had the teacher compliment on how well she holds her pencil, knows her ABC’s and just how she carries herself. I’m sure you Moms out there can relate, that is a compliment in it’s HIGHEST. I am so proud of her.
The Rest of the Crew
The boys are busy with school and excited to take an extra long spring break. Tomorrow we play the team to beat in Lompoc Little League so it’s been quite the topic of conversation.
Jesse had his first Middle School orientation, and a Middle School Honors test. He has Science coming up and my husband volunteered to go along. No Moms Allowed.
Leo is enjoying playing baseball on the Wildcats with his big brother, he’s the youngest on the team, almost 9. It means a lot to him to be able to play with the big guys and he’s been learning a lot and making new friends. He had his first hit last week, I am so proud!!!
Molly, well Molly is still Molly and as crazy as ever. She’s talking more and more, I might be the only one to understand what she is saying though. Since Macy’s been going to preschool a couple times a week, I’ve been spending time just Molly. That has never been a thing, just her and I. But, I am enjoying it so much! The only negative thing about is that she thinks she’s a baby again and does the phony whining and crying.
My husband has been busy being the 3rd Coach of the boys’ Baseball team, going to school and keeping up with all of us. He’s just beside himself with our Japan trip and wishes we were leaving tomorrow. He said he’s excited for the 13 hour airplane ride because he’ll have time to relax. He’s crazy!
On to the Goods!
Healthy-ish Banana Bread
For this recipe you will need 3 very ripe Bananas, Egg, 100% Whole Wheat Flour*, Cane Sugar*, Canola Oil, Salt, Baking Soda, Milk and Vanilla. You will notice there is a LOT more batter in the photos than what the recipe calls for, this is because I had doubled the recipe. 1 loaf never lasts in this house! The recipe below is for A Single Loaf of Banana Bread.
Preheat Oven to 325 degrees, spray a Loaf Pan with cooking or baking spray
Start by whisking together all of your dry ingredients in a medium size bowl, set aside.
In a small bowl, Mash your bananas WELL, for best results and if you have one use an Immersion Blender. Set Aside.
Using a Stand Alone Mixer, or a Hand Mixer and Large Bowl Mix the Eggs, Sugar and Oil together until well combined
Add the dry ingredients to the egg and sugar mixture and mix well
Next, add the Milk and Banana Puree, Stir by hand until mixed evenly, pour into single loaf pan.
Bake for 75 minutes, checking at 60 minutes with a toothpick. If toothpick comes up clean then you’ve got yourself some freshly baked Health-ish 😉 Banana Bread. I’ve had different batches bake at different times. It’s just one of those things to keep watching after about an hour.

- 3 EXTRA RIPE Bananas (The riper the Banana the BETTER)
- 2 Cups 100% Whole Wheat Flour*
- 1 tsp Baking Soda
- 1/4 tsp Salt
- 1 Large Egg
- 1 1/8 cup Cane Sugar*
- 1/2 cup Canola Oil (or any healthy blend)
- 2 tbsp Milk
- 1/2 tsp Mexican Vanilla (regular will do)
- Preheat oven to 325 Degrees
- In a medium size bowl, whisk together the Flour, Baking Soda and Salt. Set Aside.
- In a small bowl, Mash the ripe bananas as well as you can. For best results and if you have, use an Immersion Blender to puree the bananas. Set Aside.
- Using a Standing Mixer or a Hand Mixer and Large Bowl, Mix together the Eggs, Sugar and Oil until well combined.
- Add the Dry Ingredients to the Egg Mixture and mix well, Batter will be dry and thick.
- Using a Large Mixing Spoon, Stir in the Milk, Banana Puree and Vanilla until mixed evenly.
- Pour batter into greased Loaf Pan.
- Bake for 60-75 Minutes, checking with by inserting toothpick at 60 minutes. When toothpick comes up clean your Banana Bread is done!!
*You can absolutely use non Whole Wheat All-Purpose Flour, and Regular Sugar, it just won’t come out like my banana bread 🙂
